Kennel Master - The person who took care of the hounds for the lord more than just feeding them he was also the medieval Veterinarian.
Fowler - A person who hunts or captures wild birds could be used as an in game mechanic to capture wild chickens and bring them back to start a chicken coop.
Cobbler - A person who makes Shoes
Seamstress - A woman who makes clothes
Barber - A person who cuts hair but also acts as a dentist and surgeon
Ditcher - A person who digs castle Moats
Bailiff - the man who oversaw the care of the estate

Ewerer - The person in charge of keeping heated water for noble baths
Herald - The person in charge of knowing the banners of the realm and then to announce the arrival of that house, also shouted out the news everyday at the town square.
Chamberlain - Collected Taxes and managed the budget
